Minty Ginger Lemonade Recipe (4 servings)
Boil 2 cups of water and pour over:
1/2 cup fresh mint leaves
1/4 to 1/3 cup chopped fresh ginger
1/3 cup honey
Steep for a half hour, then strain into a 1-quart glass pitcher, pressing on the solids to extract all the liquid.
To the pitcher, add:
1/2 cup fresh squeezed lemon juice (approx. 2 large lemons)
12-ounces cold water.
Store in fridge and serve over ice cubes with a garnish of fresh mint leaves and slices of lemon.

My family loves this herbal lemonade recipe, and it has just the perfect amount of honey-sweetness. I was thinking of substituting the cold water with tea, for an earthy note -- something to try though it is hard to improve on this.
